Youth Leaders stand up against Zero Food Waste

Local Activity Number 5, titled “Engaging Youth Workers in Food Waste Action,” involves 2 trainers and 2 youth educators from each partner organization, along with 20 young people (aged 18–30) per country participating in blended mobility workshops.

Design and installation of cooling chambers for fresh fruits and vegetables with zero energy consumption, utilizing shallow geothermal energy and solar power, ensuring optimal preservation while minimizing environmental impact and energy usage.

Utilization of stone fruits selected from Imathia for the production of an innovative yogurt-type product with improved characteristics

Microwave extraction optimized peach polyphenols and pectin for yogurt fortification. Extracts increased redness and firmness over two weeks, except at high power, which weakened gel structure. The study highlights polyphenol and pectin sourcing, extraction, and gel texture optimization in strained yogurt.
